TOKYO — Major convenience store operators in Japan are stepping up efforts to develop products that reduce food waste.

Beginning on Tuesday, Lawson started to introduce such products, including sushi rolls that use surplus ingredients, in phases. Seven-Eleven Japan will sell smoothies that use discarded vegetables and fruits.
