CHIBA, Japan — Craft beers made from food that would have otherwise go into the garbage are catching on in the Tokyo area, offering drinkers a unique range of flavors while also helping to reduce food waste.

Craft beers are being rolled out that make use of unsaleable agricultural produce and food products. These “sustainabeers” are brewed by an array of companies and organizations looking to promote local economic development or expand their businesses in an eco-friendly way.
